Wallington – The story behind the small biodynamic winery

Wallington Winery is a small family owned certified biodynamic winery based in Canowindra, just outside of Cowra in NSW. Margaret and Anthony Wallington moved to the property in 1990 and the first Cabernet Sauvignon vines were planted in 1991. More vines were planted throughout the 90s and at the end of the decade saw the construction of their straw bale winery.
To this date there are 9 different varieties planted over 6 hectares of vineyard. Varieties include; Chardonnay, Viognier, Tempranillo, Cabernet Sauvignon, Cabernet Franc, Mourvedre, Grenache, Shiraz and Petit Verdot. In 2008 saw the conversion of the vineyard to run with organic and biodynamic principles, being certified with Australian Certified Organic.

A new direction – Dreaded Friend

Winemaker Steve Mobbs – selected in the Top 50 Young Guns of Wines – heads up Wallington Wines and is moving them in an exciting new direction. He grew up making wines at his family property in the Hasting Valley. Over the years his passion for wine grew. He pursued his ambition to create wines that are expressive and unique, travelling around the world to hone his craft. His experimental incursion, under the new Dreaded Friend label, draws on his experiences from across the globe, launching with two great wines – a Grenache and a Cabernet Franc. Dreaded Friend takes the amazing Wallington fruit and spins it in a more experimental direction.

The Bald Hill series

The Bald Hill series is about our story, the family and Wallington farm. All our wines are minimal intervention and certified organic and biodynamic. The Artist responsible for bringing this concept to life is the very talented, Sophie Calchera. Sophie chose to link a daughter to each of the wines, with one of the girls being illustrated on each of the back labels doing what they love to do. The front label aims to capture elements of life on the Wallington Farm. The overarching image across all labels is the infamous Bald Hill which is located above the Straw Bale winery and stands tall as a known landmark around the district.

2017 ‘Bald Hill’ Grenache Rosé
Depicts the childhood red billy cart that Anthony built for his daughters. As one can imagine many fun times and grazed knees happened over this magical machine. Isabelle the eldest of the daughters is shown on the back label travelling through the Greek islands. She explores and discovers. With this wine we create a new experience – savoury dry Grenache Rosé with supple red berry fruits.
Tasting Notes: Quince and strawberry with undertones of dried fig. Refreshing palate with savoury elements and dry finish.
Food Pairing: Prosciutto wrapped melon.

2017 ‘Bald Hill’ Chardonnay
Four pairs of yellow wellies next to an old windmill is the image we see on the front of the Bald Hill Chardonnay. This draws inspiration from right out the back of the property, where there is an old Chinese built well, along with the windmill and tank. The four set of wellies link the girls to this scene where they used to play as children. The back label is of Margaret’s youngest daughter Gabs. Sophie has depicted Gabs making a clay pot on her kick wheel. Gabs is the manager of Hermannsburg Potters, out near Alice Springs in NT. She is the artist of the family, she dreams and creates. What better wine to pair her with than our Chardonnay.
Tasting Notes: Ripe citrus and stone fruit with creamy cashew nut and toasted almond.
Food Pairing: Fig, blue cheese and rocket salad.

2015 ‘Bald Hill’ GSM
There used to be an old homestead out the back of the property. It has since long gone but still to this day you can see the singular fig tree and iris patch that come in bloom every year where the house once stood. Veronica is Margaret’s second youngest daughter. She grew up on the family property running everywhere. She represented Australia as a National longdistance runner and still loves running while she owns and operates her own gym in the Gold Coast. Veronica is our athlete she endures with determination. With this wine we show our strength – Grenache, Shiraz and Mourvedre intertwined to create a harmonious balance of fruit, spice and structure.
Tasting Notes: Juicy blue berry fruit and dried tobacco leaf. Savoury fruit and soft tannins on the palate.
Food Pairing: Lamb roast with confit garlic and seasonal vegetables.

2015 ‘Bald Hill’ Cabernets
All young kids love a tree house. You can still see the tyre swing hanging from the tree house tree on the way up to Bald Hill. Nadja is Margaret’s second eldest daughter. She has worked hard to become a star winemaker. Travelling around the world working in different wine regions she is now working full time in Orange for a winery. Nadja is our Winemaker. She observes and cultivates. With this wine we show our detail – Cabernet Sauvignon and Cabernet Franc complement each other effortlessly with structure and flavour.
Tasting Notes: Savoury red fruit with earthy undertones and hints of Campari.
Food Pairing: Balsamic mushrooms on sourdough with chorizo and parsley.
